This delicious gluten-free chocolate and orange cake is inspired by an italian recipe mixing orange and polenta.

Ingredients :

For the cake

  • 200g corn flour
  • 150g almond powder
  • 1 tbs of baking powder
  • 150g soft butter
  • 150g marmelade
  • 6 eggs
  • 60g sugar

For the syrup

  • 20 cl freshly squeezed orange juice
  • 40g honey

For the chocolate topping

  • 200g chocolate
  • 2 tbs of almond butter
  • 15 cl almond milk

The recipe:

Preheat the oven to 170°C/340°F.

Beat the eggs and sugar until foamy. In a large bowl (or a robot), mix all the ingredients of the cake until it’s homogeneous. Pour in a greased and floured bundt cake mold. Cook for 45 minutes. Leave to cool.

Prepare the syrup. Boil the orange juice and honey. Let it simmer for few minutes. Put off the heat and leave to cool.

Prepare the chocolate topping. Boil the almond milk and pour on the chocolate chunks. Mix gently using a spatula. Add the almond butter and mix until homogeneous.

Cut the cake into two layers. Brush the syrup over one side of both layers of the cake. Then, spread 1/4 of the chocolate topping on the top of the bottom layer spreading it gently to the edges. Top with the top layer. Pour the chocolate topping over the cake to cover it entirely. Parsel some orange zest on top for decoration. Allow a minimum of 2 hours before eating.
